FROM FATHER TO SON

Driven by a passion for cooking, René Meilleur decided to make it his profession. He worked tirelessly and continually challenged himself, paying particular attention to feedback from his customers in order to achieve excellence. Spurred on by the relentless demands he set himself, over the years, this self-taught chef succeeded in finding his place among the great names of French gourmet cuisine.

With no intentions of becoming a chef, Maxime Meilleur eventually turned up in the kitchens of the family restaurant at the age of 21 and has never left them. With no formal training in cooking, he watched and worked with great determination alongside his father, who passed on his know-how and values, setting him on his own career path. His experience in the French biathlon team taught him rigour and discipline, qualities that he puts to good use today at La Bouitte.

Gastronomic pairing by René and Maxime Meilleur

With a dish called Au bord du Ruisseau (By the stream), the Meilleur chefs invite their guests on a journey into the heart of the Savoyard forest, paired with the House’s prestige cuvée. Considered a “real gourmet delight” by René Meilleur, Noble Champagne Blanc de Blancs 2005 works perfectly with trout with a hint of butter, a pairing where the vegetables sidle in discreetly to play beautifully with the cuvée.
